It is because the brain loves fat, especially omega-3 fatty acids and thrives with other healthy fat molecules. Every cell in the human body needs fat and cholesterol. As you wisely put even if we don't eat any carbs, the body still can create necessary glucose through the gluconeogenesis process. So why does the WHO advocate carbs and limit healthy fats?
