Beef Fat. Grandmother fried onions in beef fat and so I follower her ways. Unfortunately buying beef fat is nearly impossible. I buy organic suet and then spend a happy Saturday rendering it down in my apartment. There’s a knack to getting it pure. The only alternative that I would consider is first cold pressed extra virgin olive oil.
